Cauliflower Crust Pizza Recipe

Are you gluten free or trying to eat cleaner? If so, I have the perfect recipe for you! My family and I tried this out last night and it was a huge hit! 

It's very hard to get my 3 year old to sit down and eat during dinner but last night, she didn't budge and even asked for seconds. My fiancé is just as hard to please when it comes to dinner. He's very picky and not easily impressed but he loved this recipe. Even if you aren't watching your diet, this is still a fantastic meal made from scratch that your family is sure to enjoy!

Ingredients:

Crust
1 head of organic cauliflower
1 tbs of fresh minced garlic
1 tbs of dry Italian seasoning
1 large free-range egg
1/4 cup of organic Mozzarella

Topping
4 oz. of organic pizza sauce
8 oz. of chopped organic mushrooms (steamed lightly)
1/2 lb. of free-range chicken breast (boiled and shredded)
1 cup of organic Mozzarella


Heat the oven to 350°F then line a large cookie sheet with parchment paper greased with olive oil or coconut oil. 
Rice the head of cauliflower with a cheese grater. The result should look like a pile of Quinoa.
Place riced cauliflower in a microwave safe bowl and heat on high for about 4-5 minutes to cook. 
Add garlic, dry Italian seasoning, and egg and mix well by hand. 
Add Mozzarella and continue mixing until ingredients are combined. 
Next, pour the mixture onto your parchment paper. Spread and flatten mixture evenly with a spatula to make a thin layer.
Bake for 30 minutes or until golden brown. Pull out of the oven and flip the crust carefully onto another sheet of greased parchment paper. 
Spread thin layer of pizza sauce over crust. Sprinkle the rest of your ingredients on top and pop back in the oven for 10 more minutes or until cheese is melted. 
Pull out of the oven and let cool for 5 minutes to allow the crust to harden a bit and enjoy!

I promise you, there won't be any leftovers and the kids won't even notice a difference from regular pizza. Hope you enjoy!
